The Three-Number Rule
Before you book a caldera table in Oia, get three numbers in writing: the minimum spend, whether it applies per person or per table, and the deposit required to hold it. If a restaurant will not give you all three, that is your answer about how the evening will go.
This is not a criticism of how Oia works. Minimum spends exist for real reasons, and we use one too. The problem is almost never the number itself. It is finding out about the number late, or hearing a different version of it from the booking page, the confirmation email, and the person who seats you.
Those three questions take one message to ask, and they remove nearly every unpleasant surprise available at a sunset restaurant. Ours are answered further down this page, in writing, which is the point.
What a Minimum Spend Is, and Why Oia Restaurants Use Them
A minimum spend is a floor on your bill. If the floor is 300 euro and your table orders 240 euro of food and wine, you are charged 300. If your table orders 380, the floor is irrelevant and you simply pay 380.
The reason they exist is straightforward. A caldera-front table in Oia can only be used once on a given evening, because sunset happens once. Those tables cost a great deal to build and maintain on a cliff, and the demand for them compresses into a single 90-minute window each day. A minimum spend is how a restaurant makes a long, unhurried sunset seating viable without turning tables every forty minutes.
Where it goes wrong for guests is when the minimum functions as a hidden price rather than a stated one. A couple who wanted a light dinner and two glasses of wine can end up paying for a tasting menu they never ordered, and reasonably feel they were charged for nothing.
That is a communication failure, not a pricing one. A minimum spend stated clearly at booking is just a price. The same number discovered at the table is a bad evening.
Per Person or Per Table, and Why the Difference Matters
This is the single most misread detail in Oia, and it changes your bill by a factor of two or more.
- Per table: a 300 euro minimum on a table for two means the table must reach 300 euro in total, so 150 each. On a table of four it is still 300, so 75 each.
- Per person: a 150 euro per-person minimum on a table for two also comes to 300, but on a table of four it becomes 600.
Identical-sounding policies produce very different bills depending on how many of you there are. Per-person minimums scale with your party and per-table minimums do not, so always ask which one you are agreeing to.
Ours is per table. A larger group does not increase the minimum, which in practice makes the cost per head fall the more of you there are.

The 300 euro minimum applies to the terrace during sunset hours only. It is the single busiest seating of the day and the only one that carries a floor. Every other way of visiting us, daytime, after sunset, or on the bar floor, has no minimum spend whatsoever.
What You Commit To When You Book
The minimum spend is only part of it. These are the rest of the terms, and they are worth reading before you reserve rather than after.
- Deposit: 50 percent of the minimum spend, so 150 euro, confirms a sunset reservation. It comes off your final bill.
- Cancelling more than 24 hours ahead: full refund, no questions.
- Cancelling within 24 hours: non-refundable.
- Running late: we hold your table for 20 minutes past the reservation time. Message us if you are delayed and we will do what we can, but past that window seating depends on availability.
- Bad weather: if the terrace cannot open because of rain, strong winds or safety concerns, you choose between a full refund and rescheduling. You are never left paying for a night we could not host.
The weather clause matters more than it sounds. Oia is exposed, the wind here is serious, and a cliffside terrace occasionally cannot open. That risk sits with us, not with you.

How to See the Oia Sunset Without a Minimum Spend
This is the part most guides leave out. A caldera sunset in Oia does not have to involve a set-menu dinner or a spending commitment, including at our own venue.
- Come to the bar floor. Bites & Bubbles takes no reservation and carries no minimum. You arrive, you order a drink and some small plates, and you stay as long as the light holds. First come, first served, so arrive early on a busy evening.
- Eat after the sunset. There is no minimum spend once the sunset seating is done. The terrace is calmer, the service is slower in the good way, and the afterglow over the caldera is frequently better than the sunset itself.
- Come during the day. Also no minimum. The same view, the same terrace, considerably fewer people, and lunch instead of dinner.

What Is Included, and What Is Usually Not
Across Oia generally, assume the following are charged separately unless you are told otherwise.
- Bottled water, still or sparkling
- Bread and couvert, where charged
- Wine by the bottle, which is where a bill moves fastest
- Cake or flowers for a celebration, if arranged through the restaurant
Service is generally included in listed menu prices in Greece, and additional tipping is genuinely optional rather than expected at the rates it is in the United States. A modest tip for good service is normal and never awkward.
